    調理器具の錫メッキにおける鉛の含有量は食品衛生法によって厳しい基準値が設けられています。安心してお使い頂けるよう、医療器具にも使われる純度99.95%以上の錫棒で一枚ずつ溶着手引きしています。 Under Japan’s Food Sanitation Law, strict regulations are in place regarding the amount of lead permitted in tin plating for kitchenware. To ensure safety and peace of mind, each piece is hand-coated using tin rods with a purity of 99.95% or higher—the same grade used for medical instruments.

    純銅にも種類があり、当工房の銅板は堅金を使用しています。焼きなました銅板は職人が楽できますが長持ちしません。金槌が鏨を打つ一定のリズムが伝統を宿し、刃物のような切れ味を保証します。 There are different types of pure copper, and the copper plate used in our workshop is made from hard brass. While annealed copper plates are easier for artisans to work with, they do not last as long. The rhythmic hammering of the craftsman’s mallet and chisel preserves tradition, ensuring the sharpness of the blade, much like that of a fine cutting tool.

Such longevity is not unusual for copper tools. We encourage you to start using one while you’re young, and enjoy it to the fullest over a lifetime.
おろし金のお手入れ How to Care for Your Grater
食材を当たった後は歯ブラシなどのナイロン製のブラシで洗ってください。時々クレンザーで洗うことで食材の灰汁が付くのを防ぎ、美しく保てます。洗った後はお湯をかけてから布巾でパタンと挟めば楽に乾きます。 After grating, wash the surface with a nylon brush or toothbrush. Occasionally using a cleanser will help prevent staining from food acids and keep the grater looking clean and beautiful. After washing, pour hot water over it and gently press it between a towel to dry it easily.
錆に関して About Rust
銅の錆を気にされる方が多いです。銅は水道水の塩基に反応し、赤褐色に変色します。これは錆と呼びますが、本体を腐食から守る被膜であり、銅の優れた耐食性の秘密でもあります。中華鍋を買ったらまず空焼きしろと言いますが、これは表面に黒錆を発生させ本体を守るためです。当然人体に無害です。水滴を残さなければ変色は防げますし、変色してもクレンザーで簡単に落とせます。 Many people are concerned about rust on copper. Copper reacts with the alkalinity in tap water, resulting in a reddish-brown discoloration. While this is commonly referred to as “rust,” it actually forms a protective layer that prevents corrosion—a key reason for copper’s excellent durability. Just as a wok is seasoned to create a protective black coating, this discoloration serves to shield the surface and is completely harmless to the human body. To prevent discoloration, simply avoid leaving water droplets on the surface. Even if discoloration occurs, it can be easily removed with a cleanser.
